Avocado Toast

Please do not ask me how many times I ate avocado toast while we were in San Diego.  When in Rome Cali, right??  But actually, the trend started before that, at home, and smashing avo on top a piece of toast with a dash of nutritional yeast, a sprinkle of salt and a swish of olive oil is a pretty amazing low-maintenance breakfast.

Tin Man by Sarah Winman

I read this for book club last month and devoured it in a matter of days.  Which isn’t saying all that much because it’s fairly short, but what I’m really trying to say it that I adored it.  Prose that’s paired down, neat and concise and able to say so much by saying so little is my absolute favorite and Sarah Winman does it MASTERFULLY.  I was blown away by how quickly and effortlessly she endears you to the characters.  So much of this book is truly heartbreaking but there are so many tender moments of love, friendship and compassion too.  I hope, if you read it, you love it as much as I did.

The Guernsey Literary and Potato Peel Pie Society

This is my favorite book.  Ever!  Which leaves big shoes for the movie adaptation to fill, but I’m happy to report that I mostly really liked it.  Lily James was charming and though Michiel Huisman is handsomer than I had pictured Dawsey, I didn’t mind it.  I super didn’t care for the hostility they wrote into Mrs. Maugery’s character (one of the most touching parts of the book is how instantly accepting the Guernsey characters are of Juliet) but 10 minutes in, Joey announced that he’d be reading the book and it meant more to me than he’ll ever know ♥

Cashew Yogurt

Gosh, this Cashew Yogurt (which it totally not yogurt and I feel weird about calling it that but hey, I didn’t name the recipe!) reminds me of something but I can’t place on my finger on what.  That frosting that comes with Toaster Strudel perhaps??  Anyway, I made some a couple of weeks ago and ate it every day straight for a week.  I am a major cashew lover so the flavor was so so good to me.  Need to make another batch!

The Great Alone by Kristen Hannah

I enjoyed The Nightingale so I figured I’d give another Kristen Hannah novel a try aaaaand, I didn’t totally love it.  I’ve read a few novels that had sort of an arctic setting and look, I’m sure it’s truly beautiful but I haven’t seen it with my own eyes and I’m NOT into cold weather so I think half the appeal of these types of books is lost on me right there.  The plot of this one is also sort of dramatic in a very predictable way, though I will say her writing is lovely.  So I guess I didn’t hate it but I didn’t love it either.

To All the Boys I’ve Loved Before

I really wanted to love this movie and parts of it were cute and fun but mostly I didn’t find it believable that this adorable and completely normal girl wouldn’t have friends and I was really put off by how the good-looking, athletic, popular guy got the girl.  Totally deserving because his life seemed so unfair up until then…  Also, I felt misled by the trailer because most of the guys she writes loves letters to are basically non-entities.  Anyway, the younger sister was amazing!  (P.S. I listened to a podcast this week and the two women in it had the exact opposite opinion of everything I just said.)

Bubbly Rose Health-Ade Kombucha

Took a little booch brew break while we were on vacation so I had to hit the store and left with this pretty bottle that tasted just as lovely.

And that’s it for this time!  It’s Friday and we’re thinking of taking a stroll through RiNo to see the all the fresh street art plus a trip to the Farmers’ Market and another drive to the mountains.  How about you?!

Weekend Things

This weekend was good and low-key and I’m starting to really appreciate the slower pace of these types of weekends.  I also want to tell you that I’m an obsessive list maker and make one for every weekend, but this weekend, I just didn’t.  Sometimes you gotta trust that the things you have to do will get done and the things you want to do will happen on their own, ya know?

Friday, we headed home, ate some leftovers for dinner — why do I always forget the totally satisfying simplicity of throwing a brat on the grill? — then headed to the Rockies game.  I do not want to talk about the first half of the game or the final outcome, so I’ll just say MATT HOLLIDAY IS BACK!

Saturday morning, after Joey had run 7 miles! — we did a thing I’d been wanting to do all summer… coffee at the Platte River!  Every time I run the trail, I look across the river and think how peaceful it’d probably feel to sit over there on a quiet summer morning.  So, we biked over to Carbon to grab coffee and breakfast to go (and maybe a mini Lavender Earl Grey donut to share while we waited for our food) then walked over to the steps along the Platte and had the place mostly to ourselves.  It was every bit as peaceful as I’d imagined.

I’m not even fully sure what I did for the rest of the day but I think it involved slow-roasting two pints of cherry tomatoes from our garden — 225° for 2 hours but I think I maybe could have gone another hour — and hitting up the grocery store, but also a hammock nap and an early dinner of leftovers before heading to the Esquire.

We saw Won’t You Be My Neighbor? and it blew me away!  I knew next to nothing about Mr. Rogers and can’t remember ever watching a full episode of his show, so his complete and utter KINDNESS was a complete shock.  I keep thinking back on the footage they had of him working on his show or interacting with children and feeling incredibly emotional.  It was so touching, inspiring and important and I hope you find the time to see this film ♥

Standard Sunday Content: every meal I ate and not photo-documenting anything in between.  Let’s just come to terms with this, okay?  Anyway, un-pictured was a 5 mile run I went on and felt really good during and a bit of house cleaning — you know how they say buying cute workout clothes will motivate you to work out?  I think it’s the same with buying good smelling cleaning products 😛 — before my sister and Wayne came over.  My perfect little sissy gave me a fun yellow mani/pedi and in exchange, I fed them spicy black bean burrito bowls for dinner.  Will I ever tire of this meal?  Probably not!

Oh and they brought Huni so she and Andi could have a little sibling reunion and look, I don’t know if they actually like each other but they do tolerate each other and I got a kick out of watching them make laps around the house as if they were magnetically attached.

What fun things did you do this weekend?
