Current Breakfast Obsession: The Humble Yogurt Bowl

I’m not quite sure when this happened, but at some point this spring/summer, I started throwing a random yogurt bowl into my breakfast rotation.*  Turns out whole milk Greek yogurt is pretty incredible and topped with perfectly ripe summer fruit and a little bit of granola, you have the makings of a breakfast that’s quick, filling and makes for a beautiful Instagram picture really freaking delicious.

As an extra dose of endorsement, Joey actually requested a yogurt bowl breakfast during our trip to the cabin last weekend.  And again just yesterday morning!  And he only eats the best of the best, so you know it’s good.

*Is it really a rotation if it’s 90% overnight oats and 10% waffles?

Also, I’m not going to tell you how to live your life, I’m just going to strongly suggest you get the whole milk, full fat, unflavored Greek yogurt.  Reminds me of when we used to have a milk delivery and would eat the cream off the top with a spoon.  Those were the days!  Also, if you don’t have a go-to granola recipe, might I strongly suggest this one (my current go-to), this one (because it has a bit of everything) or this one (for that fall vibe)?

What’s your favorite breakfast right now?

Current Breakfast Obsession: Peanut Butter Bulgur Bowl

If you’re anything like me, you come across a new breakfast combo every few months and get hooked.  I think I can blame my dad for my addictive food personality, as he notoriously discovers something he likes, goes crazy over it for months then never touches the stuff again.  Um yeah, Dad, sorry to break it to you but you totally do that.  Anyways, I thought it might be cool/fun/interesting/whatever to document those breakfast food mood swings on the bloggie, so I’m kicking things off with this peanut butter bulgur bowl.photoWhen I told Joey I was making this Cooking Light bulgur recipe for breakfast his response was “what the hell is bulgur?!”  It’s a grain!  What I love about the recipe is that you literally mix uncooked bulgur with milk then stick it in the fridge and in the morning all the milk has been absorbed and the bulgur is soft and fluffy.  Then you add peanut butter (yes, please!), fruit, a dollop of Greek yogurt and the icing on top of the cake, some chopped peanuts.  Yeah, this breakfast has it all.

For fun:

Swap the yogurt for coconut butter.

Swap the raspberries for pomegranate arils.

Serve alongside a hardboiled egg drizzled in hot sauce.  Aw yeah!
