How to Cook Sweet Potatoes on the Grill

It is at the ripe age of 26 (and like 362 days) that I feel confident declaring sweet potatoes as my favorite food.  I know, this is a serious statement to make but I’m ready.  I’ll eat them on a salad, in a veggie bowl, as fries, twice baked, raw.  Okay, just kidding about that last one, but seriously, I just love sweet potatoes.  And except for that small part of me that wonders if I’m somewhat allergic because my hands get mad itchy after I cut them up, I think I could probably live off roasted sweet potatoes.  (And pizza, and tacos, and stuffing.)

I’ve cooked them on the grill before, but this method is simpler, quicker and honestly, tastier.  Just do as I say, okay? 🙂

Step 1: Wash, peel and slice sweet potato into discs.  Wait, is it discs or disks??

Step 2: Preheat your grill and set to low heat. 

Step 3: Toss sweet potato with olive oil, salt, pepper and any other seasoning you like.  I, personally, like to add some cumin and chili powder but next time I’m totally gonna use Tony Chachere’s.  I think my Cajun ancestors would approve.

Step 4: Grill sweet potato discs for 12 minutes on each side or until softened with grill marks showing.

Step 5: Uh that’s it?  So eat em now!  Preferably with some spinach goat cheese turkey burgers.  It’s the weekend after all!

Summer Baking Bucket List

It’s no secret that I love me some fruit dessert.  I’m talking pies, galettes, crostatas, cobblers, crisps.  I’m not talking fruit as dessert, because that is a totally different (and horrible) thing that should not even exist.  But I digress.

Every year, I put together a “Summer Bucket List,” full of things like going to Film on the Rocks, throwing a BBQ, reading X number of books and I might still make one of those lists, but for now, I’m focusing on the thing I’ve been dying to do all spring… bake lots of fruit desserts!  So without further adieu, the first ever Summer* Baking Bucket List!

Rhubarb Galettes with Hazelnut Frangipane

Rhubarb and Raspberry Crostata (check!)

Blueberry-Pecan Galette (check!)

Giant Chocolate Chip Skillet Cookie (not actually a fruit dessert, but we’ll let it slide)

Blackberry-Cherry Cobbler with Honey Whipped Cream

Iron-Skillet Peach Crisp

Classic Chocolate Birthday Cake (also not fruit related, but it looks too good to pass up!)

Last, but not least… Betty Crocker’s Peach Cobbler (because you just gotta!)

Okay, this list is probably a bit ambitious (to say the least…).  In all reality, I’d be happy if I made just three of these this summer*.  Let’s do it!

*I know we’re still a month out from official summer, but it’s 75° today and I couldn’t wait any longer to publish this post!
