Tomato Basil Chicken Quinoa

My cousin Emily sent me this recipe a literal year ago and I just around to making it πŸ€¦β€β™€οΈ It was super quick, super easy, super tasty and most importantly, Dempsey loved it! Well, the first night, he loved the quinoa and the second time we ate it, he loved the chicken. I loved the whole thing! And it’s only slightly driving me crazy that the original recipe was pinned as “Tomato Bail Chicken Quinoa” and I can’t seem to change it πŸ˜‚ Oh and we always, always, always use this method for chicken and it’s the very best!

Pistachio Loaf

Literally no idea what I’m doing with my life that I didn’t take a single photo of this super unique loaf of bread I made a few weekends ago. Maybe it’s because we ate it so quickly! If you like pistachio and are also down to eat something nice and dense, this bread is for you. I’m still sort of deciding if it was amazing or too rich. Perhaps I need to make another loaf to decide πŸ˜‹

Lemon Yogurt Pancakes with Blueberry Topping

I know I talked about these super tender and delicious pancakes already, but I thought it was worth repeating. SO GOOD! We always have Greek yogurt in the fridge for Dempsey and then we lucked out having lemons and blueberries on hand too. Tempting to skip the topping, but please do not. It was definitely Dempsey’s favorite part, as proven by his blue mouth afterward πŸ˜‚ This had some good “spring” flavor, aka fresh fruit and citrus and I really loved them!

Corn Pasta with Sundried Tomatoes

Okay, maybe “corn pasta” doesn’t sound that appealing (not sure the neon color helps either…), but believe me, this tastes so so good! We *saw them make this on an episode of The Kitchen that was about utilizing ingredients that maybe aren’t in season but you can use frozen or preserved versions of even in the winter. At some point I accidentally bought three extra bags of frozen corn, so I’m always up for ways to use it! Dempsey was straight spooning the sauce into his mouth before I tossed it with the pasta πŸ˜‚ With a little bit of basil on top, this tastes so fresh!

*Saw as in, we have this on on Saturday mornings and catch snippets here and there while we chase our toddler about πŸ˜‚

Red Chile Chicken Tacos with Creamy Corn

Forever up for a new taco recipe! I made these for Dempsey and I one night when Joey was out at his basketball game and we both liked them a lot! I’ll be honest, I have no idea what a pouch of enchilada sauce is and ever since that one time I used store-bought sauce for enchiladas and made Dempsey cry over the spice level, I’m very wary of using it again, so I just subbed a can of tomato sauce, mixed with some coriander, cumin, chile powder, salt and pepper and I was kind of surprised by how good the flavor was! I still have some leftover pickled onions in the fridge, so perhaps another batch is in order.
