It’s May! I can’t believe it but I’m so glad to be here 😀 We had a good start to the month with a trip to the zoo for Glowing Wild, a Saturday park outing, Fourth Wing Night at the Rockies game for Hannah and I, Rise & Shine biscuit sandwiches, a haircut and time at home to end Sunday.












If it’s the first day of May, then your grocery delivery must contain rhubarb, right? I used it to make some cream cheese sourdough rhubarb muffins and they turned out really good! Worked until Lori brought my two + Delaney home and poor Delaney probably had whiplash from my kids saying “Delaney, look at this!” to every toy in our home 😂 I made us some stuffed pitas for dinner and then we headed out to the zoo for Glowing Wild. They had really beefed up the exhibits this year! The big moose and the butterfly were SO COOL! Dempsey and Lauren’s niece Rosie were attached at the hip the entire time and it was so cute and poor Lydia was so tired at the end and fell asleep in the car on the way home, but it was a fun fun night!




I love a free Saturday! I got up and made us all whole wheat buttermilk waffles and then Joey took Lydia to her swim lesson and I got to have some rare one on one time with Dempsey. He rode his bike and then we went to Elliott Gardens and got some plants for his school and one tomato plant for home. When I asked him which kind we should get, he told me “well, I always see you getting those big ones at the Farmers’ Market, so probably that kind.” Why’s he so observant and thoughtful? 🥹 Also Lydia’s swim lesson went terribly and we’ve decided to cancel and take a break. I feel relieved! Afterward, we met up with the other half at the park and played till lunch. Took (and takes) me sooooo long to get them to sit down and eat the food they asked me to make them but look how cute they look at their little table with flowers and sunglasses 😂




The afternoon involved Lydi’s first nap in a week, Dempsey planting our tomato and baths for both kids before Hannah picked me up for dinner and the Rockies game. We had tacos at Kiké’s Red Tacos then headed over to Coors and wow is it so nice to just gab with your best friend for four hours. The Rockies did not win but the weather was perfect and Rebecca Yarros was even there! Report was that the kids were good and made heart shaped pizza for dinner in honor of me because “Mother’s Day is soon” 🥰







Sunday was pretty low-key. Joey went on a run then picked us up biscuit sandwiches that hit the spot. I built a Lego with Dempsey and was rushing to get it done before I headed out for my haircut. I had to see it through! 😅 The kids hit up Home Depot and another park with Joey while I was gone and then the rest of the day involved random activities and letting the kids have a little TV time in the afternoon. I’m obsessed with Lydia’s smiley faces in white on our acrylic board 🥹 And I made eggplant parm that both kids spit out for dinner, hence serving it with spaghetti for a “safe option.” Joey and I thought it was good! We took them up for bed and it proceeded to take like an hour and a half to get them to stay in bed and stop yelling/singing/calling to us for something 🤪 Whyyyyy?
We are diving right into a busy week (and a busy month) but I’m feeling excited about all of it! I hope you all have a good Monday 😀
