So I thought our CSA pick ups went through this week, but it turns out our last one ended up being while we were in New Orleans. Luckily, my dad was available to drive over to the farm and get our loot for us. Thanks again, Dad! I’m sorta sad we didn’t get to make the final trip ourselves but at least we got to enjoy the veggies one final time and I’m pretty proud to say I think we used up every single thing we got. Going out with a bang!
Instead of listing out everything we got and giving you a lengthy blurb about what we cooked (I know you all love those!…), I think I’ll just show you.
Potato & Chard Hash with an Egg on Top and Bread on the Side
Homemade Falafel Wrap with Spinach, Hummus & Watermelon Radishes (the coolest!)
Harvest Cobb Salad
I could live off of Cobb & Caesar salads.
Spinach, Bell Pepper & Pepper Jack Pizza on a Homemade Crust
Kale & Potato Soup made by Joey 🙂
Afterwards, we watched the original Carrie and then I dreamt about it all night. And this is why I am now trying to convince Joey that Harry Potter is a scary movie. I’m such a baby.
Homemade Pumpkin Puree!
We got a tiny sugar pumpkin in our loot that I roasted then pureed. What should I use it in? I’m thinking of trying a pumpkin roll but I’m sort of terrified.
Final CSA Thoughts:
Joey and I both agreed that the produce we got was A+++. No, seriously, even when the farm was hit by all the rain in September and they had some flooding, our produce was amazingly fresh and beautiful. I’ve never seen anything so perfect and we were blown away by the taste of everything we tried. Things we also loved were the every two week pick up option, — I would have been so overwhelmed with veggies if we had done a once a week pick up — the variety of the produce and the ability to try a bunch of things we’d never encountered before. It’s fun to think outside the box sometimes 🙂
All that said, the drive to the farm was pretty long. Especially after moving to Denver, the drive home felt super long. I guess we have until next year to decide if the pros outweigh that one con. One last thing, every two weeks we drove past this pasture of oddly colored cows. I looked them up the first time we drove by and discovered that they are called “Belted Galloways” or “Belties” for short. They’re the Oreo cookie cow! How ridiculously cute are they?! I keep asking Joey for a Baby Beltie. Mostly so I can say Baby Beltie. I’ll miss them.
Have you ever done a CSA?
Where do you get your produce?
Have you ever seen an Oreo cookie cow?
