Some Salads For You

How often is too often to write about salad on this blog?  Is this a question I should pose to my therapist next time I’m in?  Regardless of the answer to either of those questions, I’ve got some salad recipes to share with you, in case, like Tanya, salads are your life.* Or, like me, you pack one just about every dang day for lunch and need some inspiration.

*Help, we’ve been watching a lot of Parks and Recreation.

Sweet Potato Farro Salad

The more the merrier when it comes to salad mix-ins.

Vegetarian Cobb Salad

Sometimes I just do not have the energy to make that coconut bacon, but even without it, this salad is great.

Vitamin Glow Warm Squash Salad

Follow the recipe if you must, but cold squash and a whole half an avocado per salad is highly recommended.

Roasted Carrot Salad with Quinoa, Chickpeas and Everyday Dressing

This dressing was unlike any I’d had before.  It’s heavy on tahini and nutritional yeast, which means it’s creamy and savory and might take some getting used to, but in the end, I dug it.

Corn & Chickpea Bowl with Miso-Jalapeño Tahini

If you’re not sold at “Miso-Jalapeño Tahini,” then we probably won’t get along, but in case you’re still skeptical, just know that Bon Appétit and I would never steer you wrong.
