Current Breakfast Obsession: Coconut Butter Oatmeal

Um how did I forget about coconut butter??  I recently found some shredded coconut in the depths of the fridge and decided to whip it into butter a few weekends ago.  No joke, I’ve been eating it on my oatmeal — along with some granola and peanut butter — almost every morning since then.  It’s like snow for your oatmeal!  Except way better tasting and that was probably a really dorky thing to say.

My relationship with oatmeal has been a rocky one.  I fell head over heels for it in 2010, went through a period where I wasn’t into at all but begrudgingly ate it anyway because: quick and easy and now, I’m pleased to announce that we are so BACK ON.  I look forward to this creamy bowl of yum every day, like only my fellow oatmeal loving nerds can probably relate to.  And oatmeal gets infinitely better come warm cozy winter time, amiright?


My standard technique goes something like…

Boil 1 cup of water

Add 1/3 cup oatmeal, a pinch of salt and half a banana (sliced), then turn down the heat and cook (stirring occasionally to break up banana slices) until thick and creamy.

Top with coconut butter, granola, peanut butter, etc.

(P.S. To make coconut butter, whizz 4 cups of shredded unsweetened coconut in a food processor until completely smooth and buttery — you’ll have to scrape down the sides a few times and it’ll take about 10ish minutes, but so worth it!)

  1. Ooh I love this! Yum! Have you done overnight oats at all? How about Chia Seed pudding? I did both for a while…right now I’m on a roasted root veggies for breakfast kick (make a bunch on Sunday night and freeze).

    • I don’t usually do savory breakfasts but I love roasted veggies so maybe I should give it a try. Overnight oats was my last Breakfast Obsession post 🙂

  2. I drizzled coconut butter as an “icing” to my gingerbread oat bake that I posted earlier this week and wows – it really makes the dish!! I adore coconut butter as well. Have you tried it in smoothies? So good!

    • Using it as icing is genius! If I hadn’t already made gingerbread cookies last weekend, I would totally try that. I bet it’s so good in a smoothie!

  3. I totally have had a similar relationship with oatmeal. I need to get back on that train. Problem might be that oatmeal and messy-eating kids don’t mix that well. So. Much. Cleanup. BUT I’ve been meaning to make coconut butter for so long! Usually I just eat the coconut cream off the top of the can…:)
